  3. Remove and Cut: Once the ice block is frozen and no more clear ice is forming, remove it from the container and let it sit at room temperature to temper the ice block. You can see it is tempered once it is clear on the surface. Then, using a sharp knife or ice pick, carefully cut the block into individual cubes or desired shapes.
  4. Store Properly: Store the clear ice cubes in an airtight container in the freezer until ready to use. This helps prevent them from absorbing any odors or flavors from other foods in the freezer.

  • If you get a lot of trapped air bubbles, you can boil the water and let it cool down again before putting it in the freezer. This easy trick works because water can contain quite a bit of oxygen, and the amount depends on temperature (and pressure, but we can’t easily do much about that). At low temperatures, water can contain most oxygen (up to 14 mg/L at atmospheric pressure) – this air will drastically decrease the amount of clear ice you get. Heating the water will decrease the solubility and at the boiling point water will be completely deaerated.
  • Not freezing it completely but taking it out once no more clear ice is forming saves both time for freezing and effort when cutting it up afterwards.
  • Experiment with different shapes and sizes of ice cubes to find what works best for your cocktails.
